Environment causes genetic switches?

okay so the fox has white fur in snowy conditions and red in warm conditions. Is their something something happening in their genes like are they switching on and off due to their environment? If so, is this same switching on and off of genes also the reason why caterpillars transform into erflies? I thought whatever genome you have was permanently determined when your born. Can someone please explain????
